When I start my day off with cooking breakfast, I already know it’s going to be a great day. This morning I rolled out of bed, walked to the kitchen, and instead of reaching for my usual box of cereal in the cabinet I pulled out the bread, eggs, milk, vanilla, and cinnamon and decided to whip up a batch of french toast, something I haven’t made in years. Why not take twenty minutes on a Tuesday morning to treat yourself to a yummy meal? Most people would consider cooking breakfast a hassle, commitment, or just not worth the time and energy in the morning. For me, cooking a real breakfast was my way of intentionally starting my day with productive energy and positive thinking. I enjoyed the fruits of my labor with my warm cup of coffee, and with my full belly and happy spirits I packed my bag ready for whatever else the day might bring me.
